Guac Bottom was starting by Nick Malakai, with the help of his daughter, Naima. Nick has been making traditional comfort foods into whole food plant based products for years, just for the fun of it. After cooking for many friends, he was encouraged to start selling his dishes and did several “pop-ups” serving nachos, quesadillas, salads, etc. at local vegan restaurants through 2022 and 2023. He evolved his plant based cheese into a dried, non perishable mix and launched Guac Bottom officially in 2024!
